What's the best oil to fry chips in!

for health - extra virgin olive oil

and for obvious reasons the lard is by far the cheapest method and olive oil the most expensive

Sunflower Oil is good.
Olive oil is terrible.

Different oils have a different smoke point. Olive oil is a lot lower than sunflower oil and so will burn at a lower temperature. As you want to deep fry at high temperatures you need oil with a high smoke or burn point.

You will need to change the oil a lot more with an oil with a low smoke point than you will with a high smoke point. I do recommend changing the oil in a deep fryer after 4 uses regardless of whatever oil you use. For your health and well-being, let alone the taste.

Sunflower has a smoke point of about 240C.

Whilst Olive oil is about 190C.

In order of preference

Sunflower 245C
Soybean
Canola
Corn -236C

Not recommended

Peanut
Sesame
Olive

As they are all below 230C and are mainly used as dressings due to their particularly strong and distinctive taste.

Oh, and Lard is terrible

183 to 205C

Sunflower!

Here's my way of doing home-made chips...

For extra soft chips on the inside but slightly crispy and golden brown on the outside (the BEST way! :D ), chop your potatoes as chips, pour the fat into a wok and then deep fry whilst constantly stirring.

Better than a deep fat fryer!

Peanut oil doesn't break down at high temperatures and is ideal for frying both fish and chips. What is important is that you get the oil to it's max temp before cooking anything in it. Otherwise fat absorption into the food is much higher resulting in a more soggy and unhealthy result.

Silly expensive though, considering most fryers tend to use about 3 to 4 litres of oil and need replacing with alarming regularity...
