Do shops in England/Scotland/Wales not have to abide by the Sunday trading laws? Here in NI if a shop is over a certain square footage it can't open until 1pm and then it has to close for 6pm.

That's very strange, in England at least it's just no more than 6 hours a day. The actual times vary quite a bit though - the Sainsburys here is 11 to 5, for instance. Lots of places also open 30 minutes earlier "for browsing only".
