Do you have Vista/Windows 7? If so you could use Backup & Restore - I think it will split to multiple discs.

Not quite what you're after but you could use winrar, Point it to my documents and tell it to split the archives into DVDR Size chunks, Then burn each chunk manually.
You could try the XP Backup instead then if you have XP Professional.
Failing that you could just use something like 7-Zip making it split archives at ~4.5GB each and drop all the files back in the same folder when you want to restore them.
Or failing that you could use something such as Acronis True Image or Macrium Reflect (free). I imaged my documents with True Image the other day onto 4 DVDs.
