RAM for video/photo editing 8Gb or 16Gb?

Apologies for asking so many questions - I think I have one going in most of the hardware forums really displaying my lack of knowledge in components!

As mentioned in the title, I am not a gamer and am speccing a decent i7 3770K system to overclock to get a HD video editing cruncher. I use Sony Vegas and Photoshop and was wondering if I would benefit from 16Gb over the fairly standard 8Gb. I was going to go with something like Corsair Vegance 1600Mhz RAM

XMP 9-9-9-24 values at 1600MHz, 1.50V

But at that price I would go with this and overclock

If not overclocking then the ballistix are solid at 1.5V / 1600
