So I am currently sporting a very old school FLATRON W2261VP that is still going strong but it's too small and the brightness levels are not the best.

My current set up is the 1070ti but I intend on upgrading to a 3070 in the future.

I don't know much about monitors but here are my current preferences

High Refresh Rate
1440P
GSYNC?
Quick Response Time
Adjustable monitor i.e. adjusting height and angle
Not set on panel type - currently gaming in conservatory so sunlight can be an issue (Hens, the option to adjust angle of monitor) - I would imagine IPS would be the way to go?

I know black levels aren't great on IPS though

My budget is £600 maximum (I would rather pay closer to the maximum)

Also, not sure if I should wait for January sales

Any advice/suggestions would be appreciated thank you.

You should check the LG 27GL83A-B out. its review here: https://reatbyte.com/2020/11/21/lg-27gl83a-b-monitor-review-the-best-1440p-27-monitor/
It has 1440p, G-sync support, 144hz, and 1ms, around $350.
That's cheaped out version of 27GL850 with old lowest common denominator sRGB gamut.

Though contrast of that LG's (first gen?) Nano-IPS is very mediocre for IPS and for example Gigabyte would have better contrast

So would you say the second link would be a better option?
At least would certainly recommend wide gamut monitor to get good upgrade.
(meaning 27GL83 not good)

As for particular model environment has effect to what looks best.
Our vision isn't any absolute measuring instrument, but measures brightness and contrast of whole environment.
So if room has normal light level lower contrast of LG doesn't really show in any way and response times of Nano-IPS are at absolute top level for IPS, with Gigabyte's panel behind in that.
But otherwise that Gigabyte's 1100:1 contrast is decent amount better than LG's 850:1
