I'd like to change the current ladder which is an aluminium extending X-es thing, it's pretty rickety and I've had to bodge some of the bolts that were missing their nuts to hold it in when we bought the house but it's time for the thing to go.

It's a 1960s ex council house, the loft hatch is approx 720 x 720, and 300ish deep. The loft is floored, insulated and vee lined, and I'm looking for something I can use frequently, maybe not quite every day but definitely a few times a week so something a bit more ergonomic would be good.

I can't seem to find anyone discussing different ladders on the forum so was hoping to turn to ocuk wisdom - are there any particularly good or bad options to look out for? Are wooden ones any good or more pain than they're worth? I definitely think I'd prefer one that is made of only a couple of sections, the current one flexes and bends all over the place like an accordion when you go up and it's a bit dodge if you have both hands full of stuff.

Personally I would go aluminium over wood, as it's lighter. I've used some pretty good aluminium loft ladders, so your issue must be design and/or age.
You may well be right to be fair, I dunno what type or brands might be good or ones to avoid

I had a built in wooden ladder that folded up into the attic door. Had a spring attached which made it as light as a feather to use.

I've got a sprung collapsible wooden ladder and it's brilliant. There's a handle built into it so you just reach up and pull it down. So easy and very robust.
