Will the usb socket on an headunit talk to a memory stick?

That's originally what the USB ports on headunits were designed for, so you should be fine. You may need to put your music in a certain folder structure but the user manual for the stereo should give instructions on this.

Using my stick formatted to NTFS had me scratching my head until I tried formatting it in FAT32 as a last resort!

I have a Verbatim version of the above, I think it was very slightly shorter than the SanDisk one. Either way, they're great little things and you don't notice them at all when they're plugged into the headunit.
