I'm currently on Ice cream sandwhich and if I reset my phone to factory settings will I get Gingerbread back?

No, you will go back to a "clean install" of ICS. Using ODIN and a GB ROM should work (if you want to go back to GB that is), although if you need to backup anything do it before you flash as ODIN will wipe data from what I can remember.

I mean I'd like to get Ics back, currently have Jelly bean and when I install some apps I sometimes I forget to recharge my phone the apps disappear when I load it back up and I have to reinstall it again. Which can be annoying.
