What DDR4 Ram should I be getting for my New i7 8700k build ? is it better to get higher

3000 - 3200 is the sweet spot for RAM. It's nice to have more but you will pay a significant premium for it that could be better put to use in other areas like a better graphics card or a bigger SSD for example.

8Pack 3200mhc C14 or 3600 C16 are the best options for performance and timings. Both of these kits can do 3866-4k C18-C19 too if you want to push higher.

Out of interest what sort of 24/7 timings have you got out of the 3600mhz 2x8gb kits?
I've not really played around with them yet, so running the default 16-16-16-36 1T Is there much to be gained trying for 4000mhz at slightly looser timings?

If you mean this ram , I got the same ram the other day from another place as its 40 quid cheaper and running it at 3600, not the had time to go any faster yet or mess about with timings

Thats the one I got its got 3200 MHZ on the packet , Can't try it until 1st Nov thou as can't get i7 8700k until then ha. now its just a waiting game. I did see a cool conclusion today on the internet about memory speeds , its about how much of a gain you get from 3000 up to 4000 MHZ & to be honest its a very little gain in FPS , maybe 5 fps boost on 4000mhz so memory at the moment is pretty much well over priced for what you get in return from a gaming point of view.

what about double sided samsung b dies 16gb each stick i.e 32gb in total ? will 3200 c14 still reach to the same ?
