Have you worked in a retail environment before? We're quite modern compared to some ;)

edit: this is a single database for a single store, we have over 1300 stores that are all of the same setup. 1 dell server in raid1 running SQL 2008 R2 (probably the free version of course) for the database

I've worked with enough retail customers to understand why you might end up in this situation, but it's no excuse. You have a number of issues here:
  • If it's SQL Express then you have technical limitations, but more importantly no support. Doubly so for SQL 2008 in general which went out of mainstream support in 2014 and will go out of extended support in August.
  • If it's SQL Standard/Enterprise then it's not supported on desktop OS, full stop, and never has been.
  • Windows 7 went out of mainstream support 4 years ago and goes out of extended support in 12 months.
Essentially, there's no way your setup can possibly be supported. Also, you said this is for EPOS systems. Does that mean these databases hold payment card information? If so I wouldn't like to be in your shoes the next time you have a PCI audit.

You're preaching to the choir mate. Sadly nobody outside of IT would understand and getting budget to update is nigh on impossible.

With regards to audit we are rigorously audited and customer data is not held in this database. Only monetary and stock figures.
