OK, so basically, my choice is down to the following:

Price is more or less the same, and happy to pay the extra if you think its worth it?

According to https://www.cpubenchmark.net/compare/Intel-i5-8600K-vs-Intel-i7-8700/3100vs3099, 8600K is better value for money?

(I will ask OC to see if they will price match)

you have to look at it from VM point of view. 3 systems with 2 cores running 2 threads or 3 systems running 2 cores with 4 threads each . Yes Hyperthreading adds 15% performance but in theory your running 2 core or even 1 core systems if your pushing 6 VM etc etc. i dont look into VM machines as much but seem to recall you'll need a GPU for every VM running with a pass through ?

then its about cooling those chips down, 8700 tdp is lower and can't be overclocked so lower heat

at STOCK. 8700 boosts all cores to 4.3ghz and 8600k is 4.1ghz . 8700 single core is 4.6ghz and 8600k is 4.3ghz - but everyone overclocks a K chip so you'd be wanting 4.7ghz all cores at least!

cool. well dont put the SSD in your current system else you wont upgrade. it would transform it.. infact i would get a cheapy 128gb one and make a 2nd sytem
Don't worry, my current system has a few SSD's in use already - I know the difference it makes :)

Not interested in overclocking at all. I played that game loads 10 years ago, but have no interest in it at all now.

Lower tdp, less heat, quieter: all sounds good to me!

Taking the plunge today.

Just came back to say thank you to everyone that helped me with this spec.

Everything put together and worked first time (surprise!), and been running perfectly for the last week. Loving the power, and its almost completely silent too. :)
