Best service for anonymous website + domain?

i all, long story short - i'm looking to make an anonymous website so people can't get my name via whois lookups. It's for opposing a number of council schemes and you how it is when one half want something and the other hal don't - i'd rather my name be kept private

What is the simplest service to get such a site up and running for low traffic?

Most domain registrars let you use their details instead of yours to protect your whois privacy.

WHOIS lookups don't show personal information anymore since GDPR

some major hosts (i-page for example) let you pay a small extra fee for privacy (about 10USD per year)
