Mam.

I come from the north east of England, the only time I've heard 'mum' in person was from a southern kid whose family had moved into the area. He was mocked over it no end in school, everyone thought it sounded soft and poncy. I sort of felt sorry for him, but kids are gits.

Friends I have from Ireland and Scotland commonly use 'mam' also.

Mother - When I want something.
Mum - All other times. But it sounds more like Muh, which can get confusing when my mother and grandmother are about as I call my grandmother Mama, but often Ma for short and they sort of sound similar.
