What kind of wood is this?

It's chipboard. OSB is made from far larger scraps of wood glued together. Plywood is layers of wood so you will see lines in the cross section, MDF has a far smoother/consistent finish as the wood is broken down into a pulp.

Some stuff is even cardboard honeycomb inside such as the desk/table tops.

Ikea stuff is a right mix, some pine, hardboard, chipboard and cardboard honeycomb depending on the application. Very clever material design.

I have a huge ikea desk it's bigger than a house door.

looks like real wood then you look underneath and it's like paper looking material lol

I could probably still sit on it but only because the amount of metal the desktop is screwed too

Oh boy. Its chipboard lol. Once upon a time it was so ubiquitous you couldn't escape from it nasty, heavy stuff with no rigidity or strength to it its been mostly replaced with MDF.

Its still used extensively with laminate for kitchen carcasses and such
