I want pick something in the 11gen dew having that a few generations then my current CPU i7 6700k.
There's only one real generation difference.
Intel rebranded same old 2015's Skylake four times!
"7th gen" should have been nothing more than 6750K etc, because it was only minor clock speed tweak.

"8th gen" at least finally added more cores after Intel stagnating 10 years in four cores:
"Four cores is high end Intel" was the biggest obstacle for advance of game development in last decade.
But needing new boards was completely artificial limitation for grabbing more money by force selling also new motherboards.
By hacking BIOS "6/7 gen" boards accept succeeding rebrandings fine:
https://www.techpowerup.com/250109/...0-ghz-overclock-on-a-z170-chipset-motherboard
Also except for the top models Intel disabled HyperThreading.

And 10th gen Comet aka Comedy Lake was another emergency edition with more cores crammed in and HyperThreading restored for even higher max power draw to try to keep up with AMD.

Rocket Lake (11th gen) was Intel's first actual architectural change in five years.
But because of failed manufacturing node development it being backport for same old 14nm++++++ it is hardly better than Skylake rebrandings.
And core count had to be cut back to 8, which is half of AMDs core count available for desktop platform socket.
Meaning no upgradability without changing board, while AMD likely brings 3D stacked L3 cache upgraded Zen3s for current AM4.

If you want to stick with Intel then the 10700K has decent price performance and can be had for just over £250 although another option is to wait for 12th gen Alderlake which will be out in a couple of months and will offer more cores than AMD at lower price points with a new big little architecture that's optimised for the new upcoming Windows 11.

upgrade path still leads to 11900k max though. If 12th gen launching beginning of Nov not long to wait. Can't see it being much later, they want to get xmas sales I'm guessing, and with some price leaks, they must be close to launch now

I'm thinking of upgrading my CPU, motherboard and cooler. Yet want know if did would I need to reinstall windows? Or could I just plug and play my SSD in that has windows on it?

Money a little tight at just over 700 pounds and I was looking at a i9 11900k with a comparable motherboard cooler would be NZXTKraken X53
ASUS ROG Strix Z490-H Gaming Intel Z490 LGA 1200 ATX Motherboard

(Currently I have a )

i7 6700k cooled by a h45 by corsair on a Asus m110-a mother board.
be tempted to wait rather than splash £580 on a 11900k - suggested Alder Lake prices
i9 12900K - $604.89
i9 12900KF - $578.13
i7 12700K - $422.17
i7 12700KF - $395.61

If you need to flick the switch now, 5800x best bet.

if cash is tight this costs a little bit more than 5800x?

You don't always need a CPU upgrade path though, the 10700k is plenty good enough for a few years by which time upgrading to a new system once DDR5 is mainstream would mean far more of a performance increase than upgrading the CPU on the current platform.
