As you can see from the sig long time since I built a PC and it's served me well but time to upgrade

Any comments on the following? I intend to keep existing GPU until prices have come down!

The Nxzt 510 is a nice case but the closed front with small vents restrict the airflow somewhat over mesh fronted case, maybe add another 120mm fan at the front of the case. .

The 5600x comes with a stock cooler which can be noisey so i would buy an aftermarket cooler.

The 850w rmx is the same price but there are cheaper alternatives.

Do you need the X570 board? Why not use the cheaper MSI MPG B550 GAMING EDGE WIFI motherboard? Save £20 there.
What GPU are the aiming for? 750W might be an overkill.

Agree with this.

Also, I hate gigabyte motherboards because of their bios.

that being said, the Auros Ultra is great.

On the GPU front I have no idea of the eventual target LOL

My rule of thumb was to spend up to £300 on a card, that may not happen anytime soon!
