Normal sugar is a disacharide called sucrose (C12 H22 O11), which has an oxygen atom bonding the glucose and the fructose together. This means that it's a little harder to digest than the two sugars separately, but the result will be negligible.

This seems unlikely. And how steep you find roads is basically just to do with what you're used to, I ride on Exmoor, Dartmoor and the Quantocks so I can easily cope with 20%ers because they're everywhere, but if I only rode in East Anglia then maybe I would feel differently.

If you're doing any kind of distance I'd go for the set with padding, it will be way more comfortable.
