    Ardour is a good free option, if you're used to Ableton you can either run it through Wine which works pretty well or have a look at Bitwig. Bitwig is kind of a Ableton/Linear sequence cross made by some ex-Ableton staff. Native Linux version too.

    Glass will always feel closer to the actual screen, provide more protection but will add more thickness and cost. Shouldn't affect the pencil at all. If you use your Apple pencil for anything art related have a look at Paperlike screen protectors. I'd always opt for glass myself.
