Very good point on the 500 GB SSD for OS - these are so fast I think that just the 2 TB just be enough for OS and Games, correct? So the last two configs are DDR4 based - I would like DDR5, possible or will I have to move up in price?

Are Crucial or other brands better these days? I had a Kingston and a Sandisk fail and no issues ever with Samsung, hence I tend to think sammy is the best.
