The approach I take with my workplace pension, SIPP, S&S ISA and LISA is 85% developed ex-UK, 10% emerging markets and 5% UK equities. Find the cheapest funds to achieve the mix above on each platform, set it and forget it.

Depends mostly on if your scheme/provider allows partial transfers out. There are other limitations if you have protected rights etc.

This might come as a shock but your NI payments weren’t paid in to anywhere. They got spent by the gov (practically) instantaneously as soon as they were deducted from your pay and paid by your employer, if not before.
I transfer as much as I can from my workplace pension once a year to my Vanguard SIPP where it’s invested into the same index funds as my S&S ISA and Lifetime ISA. Some workplace pensions aren’t too bad on fees but some are awful so ymmv.
