    My pseudo-Ramsay issue with the above Instagram post is that they aren't technically poached, they are boiled :p I slide the eggs in from a ramekin when the water temperature is around 75 deg C, if the eggs are a little old then we use a ring mould / scone cutter to make sure they stay put.

    We moved from Aberdeen to the US last year and miss council tax in a weird way - about $250/month here for just the rubbish collection and water/drainage. Just paid the $12k property tax for the year :( The meme about taxes being lower in the US is nonsense, they are just rebranded!

    This in a sense - the opposite holds true too, not rendered long enough and you get the chewy fat. I make sure the leave it for longer than you think on the skin-side to make sure the rendering is good - I love the iron-y ness of duck from time to time with a good salad and some roast potatoes...
