Following on from a request made by SiruisB in the ‘Can you cook’ thread, here’s one of the recipes I’ve been writing up and photographing for inclusion in a charity cookbook. There are three more to come (one breakfast dish, one dessert and one cake) and hopefully people will get some use out of them and enjoy cooking something a bit different.

You are seriously missing out on onion, have to caramelise it and it tastes sweet and yummy!

Parmesan I can understand to a certain degree, as it can taste like feet. Though in small amounts in risotto imparts a different dimension to it.

/takes off pretentious foody hat.
 
Looks great, will try it this week. Serves 2 though? Serves about a quarter of me :p

Needs Garlic though!

And good Parmesan is one of the nicest cheeses you can get, don't buy the crap from Tescos, go to a proper cheese shop! (The same for all cheeses, but especially the speciality ones).
