2 7900gts will be better at everything that isn't horribly optimised for SLi.

1360x768 isn't exactly a demanding res for these cards. You'd be ok with one decent card, thats not to say 7800 GT SLI isn't faster...

At that res even i would say go for a decent single card such as a 7900gt/gtx or 1800/1900 series 512mb card.

i'd dsay the X1900XT would be your best bet.

cheaper and still have the option of xfire if you really want.
