And why would I want to do that? (apart from it being a gorgeous country with nice people and nice food and nice wine of course :p)

Mandarin is easier for the western tongue. Much easier. Plus it is much much more widely spoken as well. Cantonese are more spoken amongst Chinese immigrants as a lot of them historically came from that part of China such as Hong Kong.

If I had to pick Mandarin is more useful if you ever want to visit China or even Hong Kong.

As for tips to learn, apart from good luck and go live there for a few years, I would find it very hard to learn it in a class room. It is a language of a test of memory more than anything else.
 
Aye, that's what I figured.

Essentially, I/My Company does a lot of business with companies in China, Taiwan and Hong Kong, so both Mandarin and Cantonese would be useful.

I didn't have much success with a few Mandarin phrases in Hong Kong, more than a few confused looks ^_^
