Have a look at this comparison of all the latest graphics cards in single/Sli/crossfire configurations. It's a bit of a read but nonetheless a good comparison.
You can pick up 7800gt's for quite a good price now if you look around. On a well known auction site they have been going for £120-150. They are getting quite scarce though so the prices may increase. Saying that the 7900gt can be had for around £200 which may be a better bet and sell your 7800gt.
