Advice - New build or GTX Upgrade?

I currently have a PC I put together in 2014. Specs are
i7-5820K 3.3GHz
16.0GB DDR3 RAM
4GB nVidia GeForce GTX 970
ASRock x99 Xtreme-6 S-2011-3 ATX
LG 34GN850 34" 3440x1440 NANO IPS (purchased more recently)

My use case is work (coding/statistical analysis on data sets) and casual gaming (Pro Evo, CoD). However I'm finding CoD and even Pro Evo struggling at the resolutions I want to make full use of the screen. I'd like to be able to play the games properly on my new LG

I have two options.

1) Either spec out a complete new build
Ryzen 7 5800X
16GB RAM
RTX 3060 TI or 1660 Super
Asus ROG X570-F

This will be expensive and overkill given my use case of casual gaming, but a great spec and will handle new games for a few years

2) Just upgrade the graphics card on my old build to a 1660 TI/Super or a 3060 TI. This will be much cheaper (subject to graphics card availability) but I dont know whether the newer graphics card will struggle under the older processor / motherboard combo. I also don't know whether 1660 is sufficient for good gaming at the resolution I want to play at on the LG.

Does anyone have any thoughts / recommendations?

3060 should hopefully be a little more available due the software nerfing of Etherium mining workflows.
How long that will last however I have no idea.
