I plan on buying in 6 months; I don't think IB will make sense, I doubt buying the latest GTX 660 will make sense either.

Hopefully those new product lines will push the prices down for SB and GTX 560 Ti.

My aim is just to have something that can max out any game at 1920x1080.

I'm looking for anywhere I can cut corners on cost without sacrificing FPS. Also wondering if anyone thinks the cost will drop when IB/600 series come out? I could get this build down today to £650 by shopping around, would be nice to get this for £600 in October.

Your biggest mistake was the tri-channel RAM, you need to be looking at dual kits.

Mobo will be IB compatible and can dual card either AMD or nvidia GPUs. The PSU can easily cope with 2 560ti's should you want to add another one much later. To be fair you really want more than 1GB of RAM, maybe consider the 480 that is on offer at the mo. Or drop to the 460 SC and OC it (850-900mhz is nigh on a 6870) and consider maybe dual carding it later.

Case has 4 fans, digital temp display with fan controller and cable management plus can mount two 2.5 inch drives (SSD)

The M4 SSD is faster and more reliable (update the FW though) and the storage drive is 2TB for a lil more £. It's really down to you or if you want to pay a lil less to get less

You lose the SLI capability, case is still good but has fewer fans.....i really do think that zalman z9 is the best budget gaming/overclocking case you can get for the money. Final spec is down to you obviously but maybe some of these suggestions might appeal to you.

while honosuseri has a good point with his spec you need to make this post in 6 months. as we dont know what the state of affairs will be like in 6 months. all it takes is one natural disaster and prices get fubar. and new releases dont always have a positive effect on old stock. oh and the exchange rate also plays a bit of a role too. like i said make a post when you have the money and get your advice then!
