Anyone got a GOOD chili recipe?

Cooking tonight...I make it a couple of times a month and it tastes great...I want to do something a bit different though...

My usual recipe is 1 red onion, 3 cloves garlic, softened in olive oil, a handful of chopped chillis thrown in swiftly followed by 500g of mince to brown.

Once browned, add some chopped tomatoes and kidney beans then simmer and thicken. Taste, add chilli seeds if it needs it.

I fancy a richer and 'fruitier' one...

...Any ideas? ;)

For my chillis, I use:
Onion
Lots of Galic
Chilli Powder
Green Pepper
Ground Cumin
Chopped Tomatoes
Kidney Beans
Corriander
Sprinkling of Sugar

Probably should add proper chillis, but I don't :p
 
Instead of kidney beans i tend to use good ol' Heinz baked beans. Adds a little flavour, and are already nice and soft. Although this would probably be regrarded as sacrilege. :D

My mum always used to do that, but I love kidney beans now, so I use them. Adding a big squirt of tomato ketchup adds a bit more sweetness I find aswell.
 
I dont have a set recipe, but in general -

Onion, green pepper*, spring onions* and celery* all fried off for a few minutes. (* optional)
Add mince, brown it off.
Add kidney beans, 1 tin of bean salad drained and washed (from supermarkets) tin of tomatoes, 2 bouillon stock cubes in half pint of boiling water, chilli and garlic, blob of marmite, or mustard, anything in your cupboard that adds flavour really. Red wine is good in it too.

Give it a stir, put a lid on and forget about it as long as you can :)

Quick tip - instead of buying mince, buy some steaks and give them a blitz in a food processor, so you end up with a much more variable texture - some bigger lumps, some smaller. Works a lot better.
 
Best tip ever for chilli...

Buy some (100%) cocoa powder and add a desertspoon of that for a smoky, deeper flavour and a darker colour as well.

Yes I know it sounds odd but adding choolate to chilli really transforms it.

Also, if you like it hot, use habanero powder - it has its own distinct fruity taste compared to the more standard types of chilli.

This works for gravy too.
 
Brown mince, stick in a jar of uncle bens hot chilli. :)

Think I will try cooking a proper chilli sometime though, owe my girlfriend a few meals.

I do it with: An onion, a clove of garlic, beef mince, tin of chopped tomatoes, tin of kidney beans in chili sauce, vegetable stock cube, mushrooms (fried first) and a fresh chili. Then add chili powder and seasoning along with a dash of Lee & Perrins or red wine.

I've heard of the cocoa powder idea before, must get around to trying it out sometime.
 
i usually go with something like your recipy penski, but i followed one of the ones on the beeb site last time i made it and it was really nice. Think one of the most important ingreediances was chocolate, you only need a little bit but it really worked, added a kind of richer flavor to it.

oh and lots and lots of chillis - scott bonnets for the win :D then idealy you want to leave it overnight to flavor up so you get some serious sting in its tail

Trust me, although i put beer in most things LOL. You should try my ale and ale pie :) :p
