Best authentic green Thai curry recipe?

After watching Uncle roger slagging Jamie Oliver off I fancy making a proper green Thai curry, with an authentic as possible recipe and cooking method.

There is an Asian shop in Peterborough and I will have to go there for a few weeks to do jury service so can get all the bits, you can get most things in Tesco but you can't get galangal for example.

Bonus points for linking a good YouTube video.

Make the paste first. Use a good processor and you'll get 99% of the way there just won't be as smooth, taste wise is about the same. I've tried both ways.

Then make the curry. Fantastic results and much nicer than any shop bought paste I have tried.

Everyone knows you use a pestle and mortar.

You can do obviously. Food processor gets you almost the same results for a fraction of the effort. I don't mind it not being as smooth.
The batch size I make it in also I don't have a pestle and mortar any where near big enough.
