Best authentic green Thai curry recipe?

After watching Uncle roger slagging Jamie Oliver off I fancy making a proper green Thai curry, with an authentic as possible recipe and cooking method.

There is an Asian shop in Peterborough and I will have to go there for a few weeks to do jury service so can get all the bits, you can get most things in Tesco but you can't get galangal for example.

Bonus points for linking a good YouTube video.
