Pretty much everything Jeremy Soule has done game wise is top quality. Just hearing the Morrowind music above has made me want to load up my Skyrim save game.

Original Wing Commander was good (for its time).
As was X-Wing and Tie Fighter with all the music samples that would cue contextually as you played.
More recently Deus Ex HR, actually bought the soundtrack CD for that.
And while it's a pants game, the score from X-Rebirth is pretty grand, there is (or was) an hour long rip on YT which mixes it altogether.
