AFAIK HDMI will go over Cat5e fine @ 1080p - google HDMI to CAT5 Balun. Some of the lesser quality balun's need two Cat5 connections - higher quality ones will operate on one.
I've got Cat5e to all rooms, four ports in each downstairs rooms and two in each upstairs. The living room has Cat5e, HDMI and RCA cable to it.
All the cables terminate to a patch panel in my office. Makes it mucho easy routing whatever I want, to wherever I want!
