can any 1 improve on this build?

edited my second spec, also what are these i7's like to clock? i have only really done a little bit on my current rig but i have no idea really! what speeds could i get at stock volts? will the gfx cards get to hot in sli as the lanes are quite close? every one seems to be avoiding that question lol and would my current corsair tx 750 be enough for this?

Depends on how good of a overcloker the cpu is, my 920 is at 4ghz @ 1.29v~ in the BIOS.

Was pretty easy to overclock.
 
Your 750w PSU will be fine, your gpu's should be fine, one card will run warmer but hopefully should be fine.

I run 2 5850 (even though they are cooler running ~) the top card was only a few deg warmer.
 
im a bit concerned with the closeness of the pci-e lanes on the sabertooth for sli. looks like there is hardly any space between two cards if installed. can any 1 inform me if this is true and what the space is like between them? also what is the gigabyte ud3/5 like for the old sli? on say the ud5 could i use the pci-e slot 1 and 3 in 16/16? or would it be 16/8?
 
The gap will be tight and the top card will run warmer, I have used crossfire with older UD5, used 2 x 5850 ATI GPU'S and the top card was only a few deg warmer.

The other boards if I remember correctly would end up limiting to 16x & 8x as the slots share bandwidth with each other.
