yup i would in you're situation.

maybe look at the abit ip35 pro/gigabyte p35 mobo's instead of the asus, unless you're set on it.

Ok, thanks. I'm either going to get the Asus Striker or the Maximus Formula. Not sure which yet. I guess the Formula is more 'future proof'.

Do you think a 600W PSU is enough? (I may add another gfx card [SLi] and HDD later).
 
I wouldn't get the nvidia chipset or the X38, way to expensive for what you're getting. Get a P35 board (perhaps the asus P5K series?), they support the new 45nm CPU's, and half the price.
 
680i are buggy for OC'ing Quads infact any 1333FSB Dual also (I got lucky but lot of time and work), advise not to get as new Mobo to replace it is now due.

What would you go for in this price range (<£1k) using only current components? Baring in mind i'm after:

SLI Motherboard
4 GB RAM
2.4 GHz Quad core (or 3GHz dual core)
8800 GT 512MB or greater
500GB HDD
PSU (may have 2 SLI gfx cards + 2nd HDD in future)
