Kind of related but do you know of any alternative recipes which aren't quite so heavy on the raisins/candy peel/etc? I really like alcoholic cakes but xmas cake is a bit bleh for me. I'd probably want to ditch the marzipan too :p

I know some relatives of mine don't like the heavy 'traditional' cake so much, I don't have a recipe to hand but it is a white/tropical Christmas cake. Something like this I assume: http://www.canadianliving.com/food/baking_and_desserts/tropical_white_christmas_cake.php

No fans of marzipan here so that's why I don't ice it at all.

I knew I didn't know much about Christmas puddings, but it seems like I really don't....

Well this is a cake, not a pudding.. but in any case, once it is assembled it sort of matures as you're supposed to 'feed' it with the alcohol of your choice up until it is time to ice/eat. As long as it is kept in an air tight container it will last for a long while, just like a pudding does I guess. Most of the ingredients are already preserved and then you're adding more preserving elements to it.

Just got round to getting the pics on to the PC.

Cooked it last weekend.

Now it is wrapped in greaseproof and silver foil ready for 'feeding' every now and then.

Already made one Christmas cake last month, sadly I couldn't resist sampling it.

Just made a second one, already feeding it, will be making a few more next week.

Been using the recipe from here for the last five years or so, great recipe, covers round & square tins from 5" to 12"
