Cooking with Slinwagh: Cheese on toast.

Ingredients

Ciabatta
Plum tomatoes
Buffalo mozzarella
Fresh basil
Extra virgin olive oil
Sprig of thyme
Salt and pepper

Slice the ciabatta, and toast on both sides, place in the oven proof dish, lay on some basil leaves, drizzle with the olive oil and lightly season.

Skin the tomatoes, place in a bowl, pour over boiling water and remove from the water when you see the skin has split, take the tomatoes out of the boiling water and plunged them into some iced water to stop them cooking.

Slice the tomatoes, lay them on the basil, take the mozzarella and tear into pieces and place this on top of the tomatoes, drizzle with the olive oil and season.

Place under a very hot grill, remove from the grill when the cheese has melted and just starts to golden.

Finally tear the thyme leaves and sprinkle over the cheese, roughly chop some more fresh basil and sprinkle on top.
