Why not wait a few weeks..quad core is just aroung the corner (2 core2duo's on one chip).

i was under the assumption it was 1 core 2 duo chip with hyper threading, thus actually being 2 cores and 2 theoretical cores  have i been misinformed?

Not that I know of. You'd be looking at the new Xeon line if you want that I think. To be honest I don't see the point even for a high end workstation as a single slot motherboard will soon have a 4 core CPU available which is what you were looking to have with a dual slot core 2 duo motherboard.

Dual CPU motherboards are also not nearly as popular with the gamers/enthusiast side.

Mainly server side.

Therefore the drivers will not be as optimised as they could be, chipset will be built for reliability rather than performance.
Less people using the motherboard = less people to find issues, so there may be niggly things which take 6 months to fix etc.

That's the reason I got an X2 - Finally dual-CPU, but in a decent, overclockable and high performance motherboard.
(Considered dual CPU with Barton's, but stil, the motherboards were not as good for gaming)

So if you wish to have 4 cores, just wait for the new CPU's coming out. :)
