could anyone take a few mins to do a survey for me please?

Do any of the coffee shops actually serve filter coffee or is it all americano/espresso based these days?

Yes. Go to a good indie run coffee shop. ;)
In London there's many. Monmouth and Notes Music and Coffee being my current preferences.

Done it. Tell him to introduce a loyalty program, the Nero one is the best I reckon. Buy 9 coffees, get a stamp on a card for each and get your 10th for free.

Or a disloyalty card. ;)

Oh the evil of fairtrade...
Makes me look a bad person when I say no to fairtrade.

Buy decent coffee from a reputable roaster (1) (2) (3) and shove fairtrade up it's own trumpet.

Couldn't care less about wifi, live music or movies, but for a coffee shop - the coffee is king. Look at Penny University for how successful a coffee shop can be when it doesn't do espresso, milk, sugar, tea, food or anything other than excellent coffee served properly with superb customer service.

Done! Yey for more coffee shops. There is only 1 in my town that is open past 6-7pm, it's nice to get out of the house and have a relaxing drink without the average numpty-filled pub.
