I'm thinking of getting a Nexus on Threes One Plan with unlimited tethering.

Could I use the phone for online gaming on Xbox Live or would the ping be to high?

And how long does it take to download 1gb on threes network? I tested an Ipad in store on ADSL Speedtest with threes network and it was getting about 2-3Mbps.

Depends, it can be done (i have done it before on occasion), but you need to keep an eye on the ping.
In some locations i can reach 4-7mb/s download speed but the ping is too high .. no good for gaming.
Other locations i have had much less download speed but 20 ping, good enough for gaming as long as its not a twitch FPS kind of game.

Played many hours of AC: Brotherhood on a mobile connection without issues.

As a long-term solution, it's probably not going to be ideal.

I'd go with this answer. I tried using my mobile tethering for games on Steam, mostly RTS etc. so nothing particularly ping intensive, but in all honesty it's not really reliable enough! I kept losing connection, timing out etc, so I wouldn't bother.

I don't use my phone for gaming but for downloading patches, browsing Live and seeing what friends are up to its more than fine :).
