Custom bike shops in London...?

I want to buy a bike.

It would be used for the road but not commuting...just cycling around London a bit. I've seen a cool bike shop by Cambridge Heath station and it looks like you can customise it. By this i mean choosing the wheels, tyres etc and putting it all together.

Any suggestions of where to go?

Tokyo Fixed, Mosquito Bikes, De Ver, Geoffery Butler, Prologue, Sigma Sports, Putney Cycles, Condor. There are loads of Indy cycle shops which should be able to help.
