RJ45 is a registered jack standard for a modular connector using 8 conductors, which specifies the physical male and female connectors as well as the pin assignments of the wires in a telephone cable.
Cat6 is still a bit overkill for today's home networks as 10 Gbit network cards are still very expensive. Cat6 is also harder to bend and generally thicker.
If installing into your walls then it might be worth the extra few pound to install Cat6 for future growth but if you are just buying a patch lead then Cat5e is more than sufficient.
Cat6 might also be of use if you are extending a HDMI lead with those Baluns you can get.
