What is the difference in these Gigabyte boards other than memory slots ie is there a difference in how far they can be overclocked?

You've not said which exact models you are referring to; Gigabyte use the same suffixes on lots of boards. However they do have a good comparison chart system on their site. Here is an example for the X58 series motherboards with the names closest to the ones you mentioned.

Sorry yes I meant the ex58 ud3r and the ex58 ud5r. In terms of overclocking potential is there a difference between the two? Also does xfire run better on the ud3r as its 2 slots run x16, x16 and I think the ud5r runs x16,x8,x8

I didn't think the UD5R existed in Europe, possibly not anywhere.

The UD5 will run two slots at 16 or three at 16/8/8, as I believe all x58 boards without an extra chip will do. The UD5 breaks 4ghz consistently, I believe the UD3R can be expected to make it to around 3.8 easily and 4 with effort. However overclocking results will strongly depend on the knowledge of the person working with the board, and on the particular cpu. All processors are unique. All motherboards are too, but they don't seem to vary as much.

Interestingly the bsck limit on the UD3R is around 230 instead of 220 on the UD5 as a result of the UD3R being on its second revision. This is irrelevant unless you're under very good cooling.
