Do you game with your Monitor straight infront or off to the side?

Monitor/KB dead centre. Secondary monitor to the left of that.

I am one of those people who has to have it dead in front, but this is not just for the monitor screen. If I am watching TV, I have to be dead in front too, none of this sit at an angle stuff. Also if there is something in the way, like a plant next to a TV with one tiny leaf poking into the screen, even just a little, that leaf has to be moved...

The vast majority of my gaming is sim racing, monitor has to be perfectly center.

I'm pretty much the same, if all the central seats are taken in a cinema, I am not a happy man.
