Does Wine Go Off?

My wife bought me a bottle of 2002 Pinot Noir a few weeks back after I mentioned to her that I quite like a drop of it. On the label on the back it says "this wine will drink beautifully between 2003 and 2006". I know it will still be perfectly drinkable but will it get progessively less so? Am I better off drinking it sooner rather than later?

as long as it's stored correctly and it doesn't get corked, it will be fine. store ina cool dark place standing up, but tilt the bottle every now and then to wet the cork so it doesn't dry out and cork the bottle

and i believe it have to be storing wine if you want to age it your self..
