Downmix 5.1 to 2 channel stereo?

Hello All,
I’ve got an old WDTV that has been used with a AV Amp, I’m going to give this to next door but have just remembered the WDTV does not down mix 5.1 to stereo, as the neighbours don’t have a AV amp what’s the easiest way to convert .mkv’s with 5.1 audio to 2 channel stereo? Ideally I’d like to leave the video stream alone.
Any advice appreciated

not 100% certain but best guess

split MKV into 2 streams , the video and audio 5.1

Take the 5.1 and down mix to stereo (format mp3 maybe ?)

Now create an MKV out of the org video and new stereo audio .... profit ?

Thanks for the suggestion, I've tried to re-encode into MP3 and it kind of works (mp3 header issue?) I've started to use Freemake and it seems to work.
