find out what's making my pc hang

by hang i mean when say i click open new file, it takes a second before it opens up. when i type now sometimes it's 5 words behind me, then catches up and is fine.

not always been like this perhaps for the last month and feels like it's getting worse.

using win7 home premium

Get the Sysinternals Suite
and use Procmon [Process Monitor].

Keep an eye on it as you do stuff and maybe it can show you what is going on. Procmon is not very intuitive to start with, unfortunately. It can help to filter the output to show only activity from a particular process.
