First OC. How far to go and what's stable?

Ok so I'm doing my first overclock and so far it's going rather well, plenty better than I thought considering my board and CPU.

Before getting to 3.31 I tried going to 3.33 from 3.26 by setting my FSB to 1480 from 1450 (big jump I know). System booted fine but initially crashed after about 5 seconds of boot so I upped the Vcore a step. Next run it crashed in Prime after a few minutes then, Vcore upped, crashed after about 20m in Prime. I then decided to up the Vcore 2 steps to 1.3875V and dropped FSB by 5MHz. I've tested this in Prime for just over 30m (2 full cycles) and it seems stable with temps peaking at 62deg. Is 30m long enough to assume stability? It says this in the Beginners Guide To Overclocking (sticky) but I'm not overly convinced.

My CPU is a Q6600 and mobo is an Asus P5N32-E SLI. At what sort of values of Vcore should I become concerned about further increases and should I be changing any others such as NB? I'm guessing I can run my temp at full load up to around 70-75deg with no worries?
I was planning on taking my clock speed as high as possible up to a boundary of either 1.45-1.5V or 70-75deg (depending on lucky I was feeling) and then start OCing my RAM, is this a sensible idea?
