I've got some lovely fresh cod fillets and I'm going to batter them, but I'm not sure what recipie to use.

There are loads of different batters, some including beer etc but what would people recommend? Use eggs or not? What about a plain flour and water mix?

Just thought I'd gauge people's opinions before I have dinner.

beer and flour.

All you need.

1/2 can of beer/larger (more if not enough batter) and beat in PLAIN flour till like slightly thin custard.

dip fish in flour 1st so the batter can grip.

dunk fish and fry!

I've been a chef for 15+ years and have always used this.

Beer Batter for the win

1 cup flour
1 1/2 cups beer
1 egg
salt + pepper

Then I usually add

1 teaspoon garlic
1/2 teaspoon paprika

beer makes a lovely crispy thin batter.

Only ever used self raising flour and water with a little salt tbh. I tend to do sauces with fish rather than batter.
