gtx 285 or 2 260's??????

2 x 260 in SLI is a lot faster, depending if the game is sli capable. A single 260 is not far off the mark from a 285, 20-25% slower typically
 
If i remember correctly, Crysis gets moderate gains from SLI, worse than some, better than some. two 260s will be much better than a GTX285 in any circumstances though, so I'd go for that
