The insured status of a car is irrelevant to you as a negligent party. It has no bearing on either your liability or you funding repairs.

I fully understand that I would still be liable, but if I were to find out that the other party definitely wasn't insured I would refuse to pay and clearly they are going to struggle to come after the money for damages when they themselves weren't insured.

Why would they struggle? You do not need an insurer to persue a third party claim, in fact you are normally better off not involving your insurer anyway?

If you negligently damage property you must pay to fix it regardless of its insured status.
